My son made this yummy salad from the All Recipes site. Sara was the author. We love this crunchy, colorful salad. Sara chills her salad for an hour. We don't have that kind of patience at our house. We just toss it together and eat it as soon as the meat is ready! Read more !
Ingredients:
1 pound ground beef
1 large head lettuce, chopped
1 1/2 cups diced tomatoes
1 large onion (sweet), diced
1 1/2 cups diced sharp cheddar cheese
1/2 cup diced monterey jack cheese
8 ounces thousand island dressing (kids use salsa.)
2 (15 ounce cans) red or purple kidney beans, drained
1 (16 ounce) package corn chips
Directions:
1. In a large skillet over medium heat, cook ground beef until evenly browned. Drain fat and set aside to cool.
2. In a large bowl, mix together the ground beef, lettuce, tomatoes, onion, Cheddar cheese, Monterey Jack cheese and kidney beans. Cover and chill for at least an hour. (We don't chill it.)
3. Right before serving, add the dressing and corn chips. Toss until evenly coated. (We just put the salad on the plate, top with corn chips, then pour on our desired topping.)
