I make this corn casserole for the holidays. I like it better than the version with sour cream in it.
Ingredients:
1/2 cup butter
1 can cream style corn
1 can whole kernel corn (undrained)
1/4 cup water
3/4 cup chopped onion
1/3 cup chopped bell pepper
2 eggs
1 pkg corn muffin mix
salt & pepper to taste
grated cheese
Directions:
1. Melt butter and saute onions and pepper until tender.
2. Combine rest of ingredients, (except cheese) and then add butter, onion & bell pepper.
3. Mix well and pour into a 9x13 baking dish.
4. Bake at 350 for 45 minutes.
5. Add cheese and return to oven just long enough to melt cheese.
