This is an old recipe that did use fresh corn but I am lazy so I use canned corn and added a couple of other more modern things such as the cooking spray.
Ingredients:
3 cans creamed corn
2 eggs slightly beaten
1 1/2 c. saltine cracker crumbs
2/3 c. margarine
2 tsp. sugar
2/3 tsp. salt
Directions:
1. Preheat oven to 350°
2. Melt butter and toss cracker crumbs in the melted butter.
3. Combine corn, eggs and 1 cup saltines in butter, sugar and salt.
4. Pour into a 1 1/2 quart oven proof dish that has been sprayed with cooking spray
5. Top with remaining cracker crumbs.
6. Bake for 30 minutes covered with aluminum foil.
7. Uncover for an additional 15 minutes or until golden brown and is set.
