Corn Bread Cake In A Mug Challenge

Hubby gave me a challenge. try making cornbread in a mug. I extend this challenge to you all too! This was not easy an easy task. I must have tried 6 to 8 attempts until I got something acceptable and good but not yet perfect. Read more . Fine or coarse grain cornmeal did not work out well. Corn flour gave somewhat better results. Finally I knew I had to add some baking powder for better texture. Also I had to add some canned kernal corn to give better flavor.I used water, buttermilk and then skim milk which gave a better texture. Cooking time also a bit of a challenge in my 1500 watt oven. 3 minutes a tad to much, 2:45 minutes much better. Your recipe will puff up like a top hat but settle to the rim of the cup. This is a cross between cake and bread and not a true cornbread Best if eaten immediately and it does taste great with butter. Enough for two people. My challenge to you: see if you can perfect it better!
Ingredients:
1 mug ( 10 oz )
4 tbs all purpose flour
2 tbs cornflour ( not cornmeal )
1/4 tsp baking powder
1 tbs sugar
dash salt
1 egg
3 tbs milk ( i used skim )
3 tbs oil
2 tbs cooked kernel corn
Directions:
1. Spray the bottom of the mug with cooking oil spray
2. In a bowl add the dry ingredients
3. Add egg, liquids, and the kernel corn
4. Whisk all smooth
5. Place in mug
6. Microwave ( mine is a 1500 watt oven ) till puffed and done( my oven from 2:45 - 3 minutes )
7. Mixture will puff up but deflate to rim with removal
8. Remove from oven and carefully invert on serving plate to loosen
9. Cut into pieces and serve with butter and jam if desired
10. Note: this is good- but not yet perfect!
