A variation on the corn and black bean-tomato style salsa - with potato cubes (Simply Potatoes) diced potatoes with onion, red bell pepper Our extension agent in our town brought in a black bean-tomato-corn mixture for people to try, with an easy oil-lime juice and garlic dressing, and this is a variation of that - easy and tasteful recipe
Ingredients:
1/4 cup fresh lime juice
1/4 cup olive oil
1 tablespoon garlic, minced for a marinade
11 ounces corn (fresh or frozen)
1 (15 ounce) can black beans (any brand)
3 teaspoons cilantro, to taste
1/4 cup red bell pepper
1 (20 ounce) package simply potatoes diced potatoes with onion
Directions:
1. Whisk 1/4 cup of fresh lime juice, 1/4 cup of olive oil, 1 T of minced garlic for a marinade -.
2. Add the corn, black beans, cilantro, and red pell pepper to the marinade mixture and let the flavors come together.
3. Separately - bake the Simply Potatoes diced potato with onion with a drizzle of olive oil, salt and pepper - or pan fry them until tender -.
4. When potatoes have thoroughly cooled, place the baked (or pan seared) potatoes on the bottom of the dish, add the marinated corn, black beans, cilantor and red bell pepper on top - serve with a sprig of fresh cilantro and a few dices of fresh tomato.
