It is soooooo good. Fresh and summery tasting. Three of us pretty much polished off the bowl as part of dinner this evening. Great recipe. I had a couple of cobs of corn left over from the other evening that I had steamed in the microwave. Read more . I just cut all the kernels off and used that and it tasted so fresh and sweet.
Ingredients:
2 cups cooked corn
1 avocado, cut into cubes
1 pint cherry tomatoes, halved
1/2 cup finely diced red onion
dressing
2 tbsp. olive oil
1/2 tsp. grated lime zest
1 tbsp. fresh lime juice
1/4 cup chopped cilantro
1/4 tsp. salt
1/4 tsp. freshly ground pepper
Directions:
1. Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in a measuring cup, pour over the salad and gently toss to mix.
2. Enjoy!
