Ingredients:
2 tablespoons butter
1 red pepper, diced
1 garlic clove, chopped
1 cup corn kernel
1 cup baby lima beans
1 small tomato, chopped
Directions:
1. Saute pepper and garlic in butter.
2. Add the remaining ingredients, cover and simmer 7-10 minutes.
