This bread resembles a savory cake and that is what I love about it. You could definitely substitute the Parmesan by another same type favorite such as Pecorino.
Ingredients:
2 tbsp melted butter
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup corn flakes
1/2 tsp ground pepper
1 cup grated parmesan cheese
3 tbsp chopped chives
2 eggs, beaten
5 fl oz milk
1/2 cup natural (unsweetened) yogurt
1 cup corn kernels (i used canned, drained)
Directions:
1. Preheat the oven to 375F.
2. Line and butter a loaf tin with parchment paper.
3. In a bowl mix flour, baking powder, baking soda, salt, corn flakes, pepper and parmesan.
4. Add the eggs and mix with a fork. Blend in the rest of the ingredients, leave the butter and chives for last.
5. Taste the batter and add more salt if needed.
6. Pour the batter into the loaf tin and bake for about 45 minutes or until fully cooked in the middle. Test it with a knife of toothpick. If they come out fairly clean, the bread is done. See Photo
