Corn and Kumara Cakes

Godd for the lunch box.
Ingredients:
2 cups mashed kumara
2 cups canned corn kernels, drained
1 egg, lightly beaten
2 tablespoons parsley, chopped
2 tablespoons chives, chopped
flour, for dusting
2 tablespoons olive oil
tomato, sauce to serve
Directions:
1. Place first 5 ingredients in a bowl.
2. Mix to combine.
3. Season to taste.
4. Form 1/4 cup measures into flat patties.
5. lightly dust with flour.
6. Place on lined tray.
7. Chill 10 minutes.
8. Heat oil in non stick fry pan.
9. Cook patties for 3 minutes each side till golden.
10. Serve with sauce or chutney hot, cold or at room temperature.
