Corn and Butternut Squash Chowder

Ingredients:
2 tablespoons vegetable oil
1 1/2 lbs butternut squash, cut into 1-inch cubes
1 medium onion, chopped
1 (10 ounce) box frozen corn, thawed
1 1/2 teaspoons curry powder
coarse salt and pepper
2 (14 1/2 ounce) cans vegetable broth
1/2 cup heavy cream
Directions:
1. Add squash cubes and onion to hot oil. Cook for 6 minutes.
2. Add corn and curry powder. Cook 2 minutes.
3. Add salt and peppwer to taste.
4. Add broth. Cook 25 minutes.
5. Remove 1/2 of the soup. Blend until smooth. Recombine.
6. Stir in cream and heat through but do not boil.
