Ingredients:
1 cup(s) black beans
1 teaspoon(s) dark chili powder
2 tablespoon(s) fresh chopped cilantro
1 tablespoon(s) fresh chopped garlic
1 cup(s) fresh corn
1/2 teaspoon(s) ground cumin
1 jalapeno diced
1/4 cup(s) olive oil
1/2 cup(s) red, green, yellow pepper
salt and pepper
1 small diced red onion
Directions:
1. drizzle corn with 1/2 olive oil and roast in 400 degree oven until corn begins to brown; remove and cool; combine all remaining ingredientswith chilled corn; salt and pepper to taste
