Corn And Black Bean Salad

Flavors of lime,cumin,garlic and cilantro marinate tomatoes,black beans and corn for a festive salad.
Ingredients:
1/2 bag (16 oz) sweet corn
2 cans(14.5 oz. ea) fire- roasted diced tomatoes
1/2 c black beans from 15 oz. can,drained and rinsed
1/4 c chopped red onion
1/2 tsp coarse salt
3 tbs chopped fresh cilantro
2 tbs fresh lime juice
1 tbs vegetable oil
1/2 tsp ground cumin
1/4 tsp pepper
1 clove garlic,finely chopped
1 avocado,pitted,peeled and chopped
Directions:
1. Cook corn as directed on pkg. rinse with cold water;drain
2. In large bowl, stir together corn and remaining ingredients except avocado. refrigerate until ready to serve,at least 1 hour. Stir in avocado just before serving.
3. Special touch:Spoon salad into bibb lettuce leaves and garnish with fresh cilantro
