Good summer side dish - quick and easy to make.
Ingredients:
1 can yellow corn
1 can beans, black
4 green onions
1/4 cup cilantro
2 tbsp. lime juice
1 1/2 tsp cajun seasoning
Directions:
1. Chop cilantro.
2. Chop green onions.
3. Drain the corn and place in large bowl.
4. Drain the black beans, rinse them, and add to the corn.
5. Add the cilantro and green onions and mix.
6. Add the cajun seasoning and lime juice and mix thoroughly.
7. Serve with cilantro garnish.
