Copycat Olive Garden Zuppa Tuscana

This is my best attempt at recreating the Zuppa Tuscana that my wife loves so much from Olive Garden
Ingredients:
1 lb hot italian sausage
1/2 lb thick cut bacon
1 large red onion
1 head garlic, chopped
1 bunch kale, stems removed and chopped
1 cup heavy cream
6 medium red potatoes
2 1/2 quarts chicken stock
salt and pepper
Directions:
1. In a large soup kettle:.
2. 1. Brown Sasage and crumble - set aside
3. 2. Cut bacon into 1/2 strip and cook in kettle - remove put aside.
4. 3. Drain off most of the fat and saute the onion and garlic in the kettle.
5. 4. Add the chicken stock and bring to a boil.
6. 5. Add the potatoes and cook until almost tender.
7. 6. Add sasuage, bacon and kale and heat back to a boil.
8. 7. Add heavy creamy and stir, cut off heat and let set 5-10 minutes.
9. 8. Add salt and pepper to taste and serve.
