Cool Shrimp Salad

This is a nice, refreshing salad with a light dressing. It is best made several hours or longer before serving. Great for a light summer lunch. I like to use the smaller size shrimp.
Ingredients:
1 lb shrimp, peeled, deveined and cooked
1 cucumber, seeded and diced
1 cup sliced radish
1 cup frozen corn, thawed
4 scallions, chopped
1/4 cup white wine vinegar
1/4 cup balsamic vinegar
2 teaspoons lime juice (or lemon juice)
1 tablespoon sugar
2 teaspoons chopped cilantro
1/4 teaspoon salt
1/2 teaspoon pepper
Directions:
1. In a large bowl, combine shrimp, cucumber, radishes, corn and scallions.
2. In a seperate small bowl, stir together vinegar, lime juice, sugar, cilantro, salt and pepper. Pour over salad mixture. Gently toss to coat.
