Ingredients:
2 cups honeydew melon, cubed
1 cup cucumber, finely chopped
zucchini, finely chopped
1/4 cup thinly sliced green onion
2 cups cooked chicken, shredded rotisserie chicken
1/3 cup lime juice
2 tablespoons canola oil
2 tablespoons water
2 tablespoons snipped fresh mint
1 tablespoon sugar
1/8 teaspoon black pepper
6 whole-grain pita bread rounds
Directions:
1. In a large bowl, todd together the hineydew, cucumber, zucchini, green onions, and chicken.
2. For dressing, in a screw top jar, combine lime juice, oil, water, mint, sugar, and pepper. Cover and shake well. Drizzle dressing lightly over the melon mixture. Toss to coat.
3. Divide mixture among 6 pitas.
