Cool-as-a-cucumber Soup

This is a really nifty soup to cool you down on a hot summer day! Lots of tasty melded flavors! Go lightly on the jalapeno chile if you don't want a zing!
Ingredients:
3 medium cucumbers, peeled, seeded, cut into chunks
1 1/2 cups chilled nonfat plain yogurt
2 green onions
1 small jalapeno chile, seeds removed
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh mint
1 small yellow bell pepper, diced
1 tomato, seeded and diced
fresh cilantro sprigs
Directions:
1. Process first 6 ingredients in blender or processor until smooth.
2. Transfer mixture to bowl. Refrigerate
3. (Can be prepared 4 hours ahead of time.)
4. Ladle soup into bowls.
5. Garnish with bell pepper, tomato and cilantro sprigs and serve.
