Whether you are stretching your food dollar or already know the secret that the best flavor is in the bones, give this a try!!!! Did you buy fried chicken or a roast chicken. If you throw those bones in a pot you will have at least 1 (or more) meal(s).
Ingredients:
chicken carcass (or duck or turkey)
water, to cover
salt
pepper
noodles
rice
diced potato (or sweet potatoes)
onion
mushroom
vegetables, your choice. i like to have at least 1 leafy like bok choy or cabbage, added the very last and only cooked a little so it still has tooth
cream, for a rich soup
coconut milk, added just before serving
Directions:
1. Place carcass, skin and other uneaten parts in a pot and cover with water.
2. Boil well.
3. Let cool.
4. If there is a layer of fat, remove it all - or leave some if you want.
5. Remove the bones after stripping of any meat hanging onto them. Yes, this is the messy part. As your hands are rifling through you will notice this wonderful gelatinous substance. THAT's the flavor!
6. Now for the soups, use the starch and veggie additions of choice with the following to create entirely different soups.
7. Soup 1 - Simple - Season with salt and pepper.
8. Soup 2 - Add poultry seasoning.
9. Soup 3 - Add Tom Yum Paste.
10. Soup 4 - Add Green Curry Paste.
11. Soup 5 - Add Red Curry Paste.
12. Soup 6 - Add chiles of choice.
13. Soup 7 - Add Instant Vietnamese Sour Soup.
14. Soup 8, 9, 10 Etc - Season with your favorite combination - EXPERIMENT!
15. If it is from a turkey carcass or many chickens you will have enough soup for numerous batches I will freeze single or family size servings of the base to be used in the future.
