I adapted my grandmother's 3 bean salad recipe to come up with this colorful, flavorful version.
Ingredients:
1 cup sugar
3/4 cup cider vinegar
1/2 cup canola oil
3/4 teaspoon salt
1/4 teaspoon black pepper
1 can green beans
1 can yellow wax beans
1 can kidney beans
1 can black beans
1 can great northern beans
1 can garbanzo beans
1 large onion ; chopped
1 green pepper ; chopped
1/2 red bell pepper ; chopped
Directions:
1. Combine sugar, vinegar, oil and salt and pepper in a large bowl.
2. Mix well.
3. Drain all beans, rinse in cold water, drain and add to bowl.
4. Add onions and peppers.
5. Mix well.
6. Marinate in refrigerator for 24 hours for best flavor.
7. NOTES: You can use any type of canned bean you prefer - cannellini, great northern, pinto, red beans, small white, cranberry, etc.
