Comfy Beef Stew With A Brew

I featured this dish in a local newspaper article recently because it was right after the holidays and we were all sugared out! It is not complicated, but does take a little time due to the browning of the meat pieces. Read more . Browning the beef first, enriches the entire dish. Dumplings can be added towards the very end of the cooking process. This is comfort food at its best, on cold wintery nights! It's well worth it!
Ingredients:
3 1/2 lbs. stew beef, cut into bite-size pieces
1 1/2 cups flour
bacon grease or oil
2 teaspoons salt
1 teaspoon fresh ground pepper
1/2 teaspoon granulated garlic
1 or 2 bay leaves
carrots, quantity to taste
1 cup diced onion
2 celery ribs, diced
diced potatoes, quantity to taste.
2 tbsp. worcestershire sauce
3 cups boiling water
2 tbsp. tomato paste
1 can beer or beef broth
Directions:
1. Mix flour with salt, pepper and garlic.
2. Dredge beef cubes in flour mixture.
3. In a Dutch oven, melt bacon grease and quickly brown in batches.
4. (If you purchase stewing beef cubes, your prep time for browning will be approx. 30 minutes.)
5. While browning the beef, cut up carrots, onion and celery into bite-sized pieces.
6. When browning is complete, return all the browned beef to the Dutch oven and add boiling water, Worcestershire sauce, tomato paste, bay leaf/leaves and beer or broth.
7. Bring to a boil; partially cover and lower heat to simmer and cook for 2 hours.
8. Add carrots, onions and potatoes and cook another 1 1/2 - 2 hours. Season to taste.
9. Serves 6 to 8. Servings vary depending on your guests’ appetites!
