Warm comforting jambalaya is great for chilly winter nights. Easy to prepare. It's packed with vegetables but my kids still love it.
Ingredients:
1 cup chopped celery
1 green bell pepper
1/2 head cabbage
2 cups rice
1 medium onion
1 lb kielbasa or 1 lb other smoked sausage
1 lb chicken
1 (4 ounce) can tomato sauce (tomato soup will also work)
1 (14 ounce) can chicken broth
2 teaspoons of minced garlic (or garlic powder)
1 tablespoon season-all salt
2 tablespoons cajun seasoning
Directions:
1. Chop up the celery, onion, bell pepper and cabbage and put in a large pot.
2. Add the tomato sauce and the chicken broth.
3. Add your seasonings (garlic, Cajun seasoning and Season All).
4. Fill the pot with enough water to cover all the ingredients, then stir.
5. Bring to a boil, cover and then simmer for 1 hour.
6. Add the rice, and an additional cup of water, re-cover, bring to a boil and simmer for 25 minutes.
7. Cut the Kielbasa and chicken into bite sized pieces and brown in a frying pan, add the Kielbasa and chicken to the pot when the rice is done cooking, stir.
8. Cool off and enjoy!
