Ingredients:
3 lbs ground beef
3 eggs
1/2 teaspoon ground pepper
1 teaspoon salt
2 teaspoons garlic powder
2 teaspoons parsley
6 ounces frozen chopped spinach (drained)
8 ounces black olives (chopped)
1 cup goat cheese
1 cup seasoned bread crumbs
2 cups chicken broth
10 ounces simply potatoes® shredded hash browns
1/4 cup ketchup
6 slices cooked bacon
Directions:
1. Place the ground beef in a large bowl and add the eggs, pepper, salt, garlic powder, parsley, flavored bread crumbs and chicken broth. Mix together well. Squeeze out all liquid from the chopped spinach. In a separate bowl combine the shredded potatoes with the chopped black olives and the drained chopped spinach. Mold half of the ground beef mixture into a ball and flatten it down and place in a roasting pan. Add the shredded potatoes, black olive and spinach mixture on top of the meat. Then place the goat cheese on top of that layer. Take the remaining ground beef and cover up the top of the loaf. Drizzle ketchup over the top of the loaf and place the bacon strips over the ketchup. Bake 375 degrees for 1 1/2 hrs or until done.
