Collard Green Soup

Ingredients:
1 (1/2-pound) ham bone or ham hock
3/4 pound spanish sausages or chorizo, sliced
1/4 pound salt pork, rinsed
1 quart water
1 (16-ounce) package frozen chopped collard greens
1 (16-ounce) can great northern beans, undrained
1 small onion, finely chopped
1 small green pepper, seeded and finely chopped
1 tablespoon bacon drippings
4 small red potatoes, peeled and diced
1 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Combine first 4 ingredients in a large Dutch oven. Bring to a boil. Reduce heat; cover and simmer 30 minutes. Add collard greens and beans; cover and simmer 30 minutes.
2. Sauté onion and green pepper in drippings until tender. Add sautéed vegetables, potatoes, salt, and pepper to collard green mixture; stir well. Cover; simmer 30 minutes or until vegetables are tender. Remove and discard ham bone and salt pork.
3. Spoon soup into individual bowls. Serve hot with cornbread, if desired.
