Ingredients:
4 cups chopped fresh collard greens
10 cup boiling salted water
8 ounces sliced fresh mushrooms
1/2 bell pepper, chopped
2 garlic cloves, minced
4 green onions, sliced
4 cups cooked rice
2 tablespoons olive oil
Directions:
1. Cook collard greens in boiling salted water 7 minutes; drain. Sauté mushrooms, bell pepper, garlic, green onions, rice, and collard greens in hot olive oil in a skillet over medium heat until thoroughly heated.
