A Basic recipe for a wonderful dressing. Aslo great as a marinade for chicken, fish and seafood.
Ingredients:
1/4 cup white wine vinegar
1 tbsp dijon mustart
1 tbsp chopped shallots
1/4 tsp sea salt
1/4 tsp fresh ground black pepper
1 cup olive oil ( may use walnut oil, truffle oil or sesame seed oil to enhance the flavor. just use 1/2 of each kind of oil)
Directions:
1. In a small glass mixing bowl, whisk together vinegar, mustard, shallots, salt and pepper.
2. Slowly whisk in the olive oil.
3. Makes 1 1/3 cup of dressing.
4. For Variations add one of the following ingredients:
5. Cheese Variation add - 2 oz of grated silton or parmesean cheese
6. Herb Variation add - 2 TBSP of favorite herb - tarragon, mint, basil or chives
7. Citrus Variation add - 2 TBSP orange, grapefruit or lime juice + 1 tsp of that fruit's zest
