A great summertime cole slaw for picky eaters who don't like mayo!
Ingredients:
1 medium head cabbage, shredded
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 onion, chopped
3 carrots, grated
2 stalks celery, chopped
1 1/2 cups cider vinegar
1 cup vegetable oil
1/2 cup white sugar
2 teaspoons dry mustard
3 teaspoons dried dill weed
Directions:
1. In a large bowl, toss together cabbage, red pepper, yellow pepper, onion, carrots and celery. Refrigerate until serving.
2. In a small bowl, whisk together the vinegar, oil, sugar, mustard and dill. Pour over salad and toss to coat just before serving.
