Cold Soba Noodle Toasted Nori And Spinach Soup

This is from a Japanese recipe for soba noodles . I threw in the spinach.
Ingredients:
8 oz. dried soba noodles
1 1/2 cup hot dashi stock
1/4 cup soy
2 tbsp mirin
2 tbsp sugar
2 tbsp wasabi paste
2 sheets dried nori seaweed (toasted and cut rough chiffonade)
1 tsp toasted sesame seeds
1 bunch fresh spinach (stemmed, washed and cut rough chiffonade)
Directions:
1. Bring a large saucepan of water to a boil, add the noodles, return to a boil, then add a cup of cold water. Return to a boil again, then add another cup of old water. Return to a boil for a third time, then drain, refresh and chill.
2. Bring the next four ingredients to a simmer in a sauce pot until sugar is dissolved. Remove from heat, then divide between four soup bowls.
3. Divide soba noodles among bowls, top with spinach and nori. Serve with sesame seeds and wasabi.
