Cold Shrimp Rice Salad

A refreshing salad especially on a hot summer night
Ingredients:
3cups cooked rice
2 cups cooked, peeled and deveined shrimp
1/2 pound fresh mushrooms, sliced
1 cup sliced water chestnuts
1 cup chopped green pepper
4 ounce jar sliced roasted peppers,drained
1/4 cup chopped fresh parsley
1/4 cup chopped fresh chives
1 cup olive oil
3 tablespoons white vinegar
3 tablespoons soy sauce
2 teaspoons dijon mustard
1/2 teaspoon hot sauce
salt and pepper to taste
Directions:
1. Combine rice, shrimp, sliced mushrooms, water chestnuts, green pepper, roasted peppers, parsley and chives in a large bowl; toss gently.
2. Combine olive oil, vinegar, soy sauce, mustard and hot sauce in a small bowl; stir well
3. Pour dressing over rice mixture; toss gently. Add salt and pepper to taste. Cover and chill at least 1 hour
