Cold Sesame Rice Noodles

I love rice noodles! This is a take on the traditional sesame noodle dish from Chinese restaurants. Fantastic!
Ingredients:
1 lb. rice noodles - whichever type is your favorite - prepared according to package directions
2 t. vegetable oil
1/3 c. sesame seeds
6 t. soy sauce or wheat-free tamari to make it gluten-free
6 t. tahini (sesame seed paste)
1/4 c. sugar
3 t. white vinegar
3 t. dry white wine
1 1/2 t. garlic, miniced
1/2 t. ginger
red pepper flakes
shredded lettuce
sliced green onions
Directions:
1. Transfer cooked noodles to large bowl and toss well with oil. Cover and refrigerate until chilled.
2. Toast sesame seeds in heavy small skillet until light brown stirring constantly. Tranfer to food processor container with next 9 ingredients and process until smooth. Mix well with noodles and refrigerate.
3. At serving time, put lettuce on large serving platter, mound noodles in center and top with green onions.
4. Optional: Add some shredded cooked chicken breast, shredded carrots, finely slivered sweet red pepper or whatever tickles your fancy.
5. NOTE: If you're not crazy about rice noodles, use spaghetti.
