Cold Pasta Salad With Fresh Herb Vinaigrette

This is an a easy cold pasta salad with a homemade dressing. This dressing can be made on its own and used for salads, marinade, etc also.
Ingredients:
6 cups cooked pasta; we used a mixture of cavatappi and radiatori and elbow pasta (because that was what was happened to be in the cupboard)
1-2 small tomatoes
1 stalk celery
1/2 med green pepper
1/2 small red onion
dressing
6 tbs extra virgin olive oil
2 cloves garlic, crushed
1 tbs apple cider vinegar
1 tbs balsamic vinegar
1/2 tsp black pepper
1/2 tsp salt
1/4 tsp dried oregano
1 tsp sugar
1 tbs fresh diced basil
1 tbs fresh diced mint
Directions:
1. Cook pasta and refrigerate until ready to use
2. Heat olive oil over med heat. Add crushed garlic and cook until golden brown
3. Poor into small bowl and set aside to cool
4. While garlic and olive oil are cooling, dice all vegetables and add to pasta in large bowl
5. Once cool, add apple cider vinegar, balsamic vinegar, salt, pepper, oregano and sugar to oil. Whisk to combine. Add basil and mint.
6. Pour over pasta and vegetables. Gently toss to coat.
7. Refrigerate for at least an hour before serving
