Cold Mustard Potato Salad

A picnic classic. Or a family gathering classic. Or a holiday favorite. Or.... You can adjust any of the ingredients to taste. This is a personal choice. If you use red potatoes you can scrub them and leave the skin on them.
Ingredients:
4 pounds white potato, scubbed
2 stalks celery, chopped
1/2 medium onion, chopped
5 medium gherkins, chopped
2 large eggs, hard-boiled, chopped
1 cup mayonnaise
2 tablespoons mustard
1/2 tablespoon garlic powder
Directions:
1. Place potatoes in a large saucepan. Boil on high heat until tender. Remove and peel if necessary.
2. Put potatoes in a very large bowl. Add other ingredients and mix gently. Let rest in the fridge for several hours before serving.
