This cold soup served as an appetizer with special crackers is a winner ...or for brunch with crusty bread and cheese. Sometimes the simplest things are best!
Ingredients:
english cucumber
cups natural yogurt
1 teaspoon minced garlic
1 tablespoon chopped dill
1 tablespoon sunflower oil
finely chopped walnuts (optional) but great
2 cups cold water
kosher or grey salt
freshly ground black pepper to taste.
fresh chopped chives make a nice topping and this is a great opening act for a heavy meal.
Directions:
1. Grate the cucumber and put it in a bowl.
2. Whisk all the remaining ingredients together in the bowl with the grated cucumber.
3. Let the soup sit in a refrigerator for 20-30 minutes covered,.and serve
