Cold Cucumber Avocado Soup

A healthy tasty soup which can easily be multiplied, Use Greek yoghurt for best texture
Ingredients:
4 med cucumbers, peled seeded and chopped
1 ripe avocdo, pitted and chopped
2 scallions chopped
6 oz plain greek thick yoghurt ( fat free okay too )
juice and zest of half a lemon
1 jalepeno, seeded and chopped ( optioonal 0
1/2 cup water ( i add a spash of white wine at times )
salt and pepper
chopped cilantro for garnish
Directions:
1. Prep time does not include chilling
2. Blend cucumber till smooth
3. Add remaining ingreisdnts and blend smooth again
4. Add water as blender is running, a little at a time for desired consisitency
5. Chill mixture well
6. Chceck for seasoning again
7. Serve in samll glass bowls and garnish with cilantro or herb of choice
