Ingredients:
2 ripe avocados, peeled and cubed
1 cucumber, peeled, seeded and cubed
3/4 cup low-fat soy milk
2 tablespoons cilantro
2 green onions, chopped
2 cups vegetable broth
1 salt and pepper to taste
1 tablespoon lemon juice
Directions:
1. In a blender or food processor blend the first 5 ingredients, until smooth. Add the lemon juice, salt and pepper and as much vegetable broth as you want to make the desired consistency. Chill.
