A yummy, easy breakfast treat. Coconut is what makes it colada , by adding pineapple and banana you get a fun combo of flavors that might remind you of sipping umbrella drinks on the beach! :)
Ingredients:
1 cup steel cut oats
1 can coconut milk
1 cup pineapple juice
1 cup water
1 ripe banana, mashed
1/4 cup crushed pineapple, very well drained
dash of salt
honey to sweeten, if desired(i didn't think it needed it)
shredded or flaked coconut to garnish, if desired
Directions:
1. Combine coconut milk, pineapple juice and water in medium sauce pan and bring to a boil.
2. Add oats and reduce temperature to simmer and cook about 20-25 minutes, without stirring.
3. Stir well and add salt, banana and crushed pineapple(and honey, if using)
4. Cook until desired consistency and heated through.
5. Sprinkle with coconut, if desired.
