Coffee Spiced Chicken Satays

Great satay recipe, uses coffee!
Ingredients:
1 tablespoon minced fresh ginger root
2 cloves garlic, minced
2 tablespoon ground coffee, colombian, sumatra or similar
2 tablespoons peanut oil
1/4 cup low-sodium soy sauce
2 tablespoons chunky peanut butter, freshly ground if possible
1 tablespoon light brown sugar
2 tablespoons lime juice
3 cloves
1 tablespoon curry powder
1 teaspoon crushed red chilies
2 pounds chicken tenders
24 wooden skewers
Directions:
1. prep does not include overnight marinating
2. Peel and mince fresh ginger root. Mince garlic.
3. In a large bowl, combine the ginger root and garlic with all the other ingredients thoroughly, except the chicken, and set aside while you thread the chicken pieces onto the skewers.
4. When done, place the skewers in a deep glass dish then pour the marinade over the skewered chicken.
5. Cover tightly and let them marinate in the refrigerator overnight, or at least several hours before grilling.
6. To cook, heat coals or gas to medium heat on your grill.
7. Remove the skewers from the dish and place on the grill all at once.
8. Cook about 5 minutes on each side, or until cooked through.
9. Use remaining marinade to brush onto the skewers, as necessary.
