Coffee Chocolate Nutty Sandwich Cookie

Two layers of chocolaty, nutty cookies with a semi-sweet filling.
Ingredients:
cookie
250 g margarine (1 cup)
5 ml instant coffee (1 teaspoon)
30 ml boiling water (2 tablespoons)
60 ml dark brown sugar (1/4 cup)
250 ml chopped nuts (1 cup) of your choice
375 ml cake flour (1 1/2 cup)
125 ml cocoa (1/2 cup)
filling
15 ml margarine (1 tablespoon)
375 ml icing sugar (1 1/2 cup)
15 ml cream cheese (1 tablespoon)
5 ml instant coffee (1 teaspoon)
5 ml warm water (1 teaspoon)
small slab dark chocolate, melted
Directions:

3. Mix coffee and water together.
4. Let it cool down.
5. Cream the margarine, coffee and sugar until light and fluffy.
6. Mix in the nuts, cocoa and flour.
7. Mix very well.
8. Put dough in a cookie press.
9. Press out the cookie on a greased baking tray.
10. Bake for 10 - 15 minutes at 200 deg C (392 deg F).
11. Let it cool down totally.

14. Mix the coffee powder and water well.
15. Let it cool down totally.
16. Cream margarine and icing sugar together with a fork until crumbly and all of the sugar is covered with margarine.
17. The amount of margarine seems too little, but it actually mix in quite well.
18. Stir in cream cheese.
19. Stir in the melted chocolate.
20. Stir in the coffee.
21. Mix until very well blended.
22. Put on flat side of one cookie.
23. Put another cookie on top.
24. Place in fridge until set.
