cod flan with onion compote

this looks and tastes wonderful, and is so easy to prepare. makes a great appetizer course for a formal dinner, and can easily be multiplied
Ingredients:
1 large onion, thinly sliced
1 cup red wine
1/4 cup balsamic vinegar
1 teaspoon sugar
salt, pepper
12 ounces cod, skinless
3/4 cup heavy cream
1 egg white
salt, pepper
cooking spray
Directions:
1. preheat oven to 325.
2. in a pan over medium heat, combine onion, wine, vinegar, salt, pepper.
3. simmer 15 minutes until reduced, remove from heat.
4. spray 4 ramekins.
5. put cod, cream, egg white, salt& pepper in a blender, process until smooth pour into ramekins until half full.
6. place ramekins into a large baking dish, fill with water halfway up the sides bake for 20 minutes or until set.
7. spoon some onion onto 4 plates.
8. unmold flans on top of onions.
9. garnish with more onions and fresh sprigs of herbs.
