to give boring cupcakes a new taste!
Ingredients:
make my cupcake batter as is but use coconut milk instead of milk
pineapple jam
roasted coconut
icing
Directions:
1. mix batter
2. spoon half mixture into cupcake pan
3. spoon pineapple jam in centre
4. top with batter
5. bake at 180 degrees
6. once cooled make icing
7. add coconut ess and roasted coconut
8. ice cupcakes and sprinkle with remaining coconut
