Her mom's been making these for at least 20 years, and they are REALLY REALLY good. The flavours are perfect for Christmas.
Ingredients:
4 ounces cream cheese
2 tablespoons butter
2 tablespoons milk
1/2 cup packed brown sugar
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups dried shredded coconut (dessicated)
1/3 cup finely chopped crystallized ginger
1/3 cup finely chopped maraschino cherry
1 cup toasted dried coconut
24 maraschino cherries, halved
Directions:
1. Preheat oven to 350°F Cream together cream cheese, butter, milk and brown sugar. Sift together flour and baking powder and salt,and stir into creamed mixture. Stir in coconut, ginger and chopped maraschino cherries. Refrigerate dough for 1 hour.
2. Roll dough into 3/4 balls, then roll each ball in toasted coconut. Press a maraschino cherry half into the top of each ball (or make an indent with your thumb and fill with jam). Bake at 350F for 15 - 17 minute.
