Anne Marie Gaspard of Gros Islet, St. Lucia, writes: I've always enjoyed cooking — for my family and for myself. My children are grown, so when they visit on Sundays, I spoil them with good home-cooked meals. During the week I like to make dishes that are different but still easy.
Ingredients:
3/4 cup whole milk
3/4 cup canned sweetened cream of coconut (such as coco lópez)
1 15- to 16-ounce bag frozen unsweetened strawberries
1 medium banana, peeled, diced
fresh strawberries
Directions:
1. Place first 4 ingredients in blender. Cover; blend until smooth, stopping to scrape down sides. Divide smoothie among 4 glasses; garnish with strawberries.
