Coconut Pudding (Haupia)

This is from our Aunty Ethel who grew up in Hawaii. Our whole family loves it. Its a light and refreshing dessert rather than rich and heavy. You can find coconut milk in the Asian food section of your local grocery.
Ingredients:
1 cup coconut milk
6 tablespoons sugar
1/8 teaspoon salt
2 cups fresh milk
6 tablespoons cornstarch
Directions:
1. Place all ingredients in a medium sauce pan and cook over med-high heat until thick.
2. Stir constantly with a wire whisk so it won't scorch or clump.
3. Pour into buttered casserole dish .
4. Cool completely. Refrigerate.
5. Cut into squares.
6. It taste best after its been refrigerated a few hours.
