Coconut Pecan Sweet Potatoes

This is a recipe from TOH Healthy Cooking magazine. The contributer is Raquel Haggard. I love sweet potatoes and i really like that this is made in a slow cooker so it isn't tying up the oven or stovetop.
Ingredients:
4 lbs sweet potatoes, peeled and chunked
1/2 cup pecans, chopped
1/2 cup flaked coconut
1/3 cup sugar
1/3 cup brown sugar, packed
1/4 cup butter, melted
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon coconut extract
1/2 teaspoon vanilla extract
Directions:
1. Spray the inside of a slow cooker crock with cooking spray.
2. Place the sweet potato chunks in the slow cooker.
3. Combine pecans, coconut, sugar, brown sugar, butter, cinnamon and salt.
4. Sprinkle over potatoes.
5. Cover and cook on low 4 hoursor until potatoes are tender.
6. Stir in extracts.
