Coconut-Orange-Pineapple Ice Cream Pie

This is a delightful tropical ice cream pie. It is great when you are on a low sugar diet. WHen I want a bit of the tropics, this is what I reach for.
Ingredients:
1 shortbread pie crusts or 1 graham cracker pie crust
1 (8 ounce) container of cool whip fat-free whipped topping
1/2 cup of drained crushed pineapple
1/4 cup unsweetened dried shredded coconut
2 -3 drops orange extract (or to taste)
2 -3 drops orange food coloring (or to desired shade)
Directions:
1. Put the Cool Whip Fat Free Whipped Topping into a bowl.
2. Fold in extract and food coloring. Do not beat. You do not want to deflate the whipped topping.
3. Fold until well blended.
4. Fold in coconut and pineapple.
5. Pour into pie shell and freeze.
