Coconut Oatmeal Raisin Cookies

Ingredients:

  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 tsp salt
  • 3 cups rolled oats
  • 1 1/2 cups coconut, flaked
  • 3 tbsp water
  • 1 cup raisins

Directions:

  1. Preheat oven to 350*.
  2. Cream butter and sugar until fluffy.
  3. Add egg and vanilla. Beat well.
  4. Combine flour, baking soda, salt, oats and coconut. Gradually add to creamed mixture.
  5. Add water and raisins.
  6. Drop by teaspoon full onto a parchment lined cookie sheet.
  7. Bake for 11 - 14 minutes. Cool slightly before removing from sheet.
