Coconut Oatmeal Macaroons

Ingredients:

  • 2 cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup shortening
  • 2 cups brown sugar
  • 1 tbsp vanilla
  • 1 cup coconut
  • 3 1/2 cups oatmeal

Directions:

  1. Sift flour, baking powder, baking soda and salt together. Set aside.
  2. Cream shortening and brown sugar.
  3. Stir in eggs and vanilla.
  4. Add coconut and oatmeal. Mix.
  5. Stir in dry ingredients.
  6. Chill thoroughly - at least an hour.
  7. Form into small balls and place on greased cookie sheet.
  8. Flatten slightly.
  9. Bake in a 350 degree oven for 15 minutes.
  10. Can drizzle with melted chocolate and then let set for an extra touch.
