Ingredients:
1/2 cup butter
1/2 cup sugar
2 eggs
1 1/2 cups self-rising flour
1/4 cup flaked coconut, small flakes
2 tablespoons milk
Directions:
1. Cream the butter and sugar together until light and fluffy.
2. Beat in eggs one at a time, adding a little flour with the second.
3. Fold in remaining flour, coconut, and milk.
4. Turn into a greased and floured loaf tin. Bake in a preheated oven at 350 degrees for 60-75 minutes.
