Coconut brings flavor to the recipe. It is a must try.
Ingredients:
1 1/2 c. of red lentils
1/2 of finely chopped red onion
1 clove of finely chopped garlic
1/2 in. of finely chopped piece fresh ginger root
1/2 c. fresh shredded coconut
3/4 c. of soy milk
2 1/2 c. of water
3/4 c. of soy milk
1 tbsp. of curry powder
1 tsp. of ground black pepper
Directions:
1. First you want to add lentils plus water in a good size pot over medium flame, let this come to a boil.
2. Now you can stir in your onion, garlic, and the ginger.
3. You want to cover this with a lid, and cook on low flame for around 30 min.
4. Then you wan to take your coconut and soy milk in the blender until it is thick.
5. Mix this in with lentil mixture.
6. You will want to season this with the curry and pepper.
7. Let this cook for approx. 10 to 15 min.
8. Ladle and enjoy!
