Coconut French Toast

So I really love coconut, and have been incorporating it into a lot of my cooking recently...this is the latest creation :)
Ingredients:
8 thick slices of crusty bread
4 eggs
1 cup shredded coconut
1 tsp vanilla extract
1/2 cup vanilla almond milk
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
coconut oil
garnish (optional): sliced strawberries, powdered sugar, maple syrup
Directions:
1. Whisk the eggs, milk, vanilla, cinnamon, nutmeg, and cloves together in a shallow bowl.
2. Spread out the shredded coconut on a plate.
3. Cover the bottom of a large pan with coconut oil and heat on medium high.
4. Dip one piece of bread at a time in the egg mixture, then coat it with the shredded coconut.
5. Turn the heat down to medium and fry 2 slices at a time. Flip after about 3 minutes, or until golden. You may need to carefully wipe the pan with a paper towel to remove any loose bits, so that they don't burn. Then add more coconut oil to the pan before frying more bread.
6. Serve hot topped with sliced strawberries, maple syrup, and/or powdered sugar.
