Coconut French Toast

Ingredients:
12 eggs
1 1/4 cups milk
2 teaspoons sugar
1 teaspoon ground cinnamon
14 slices day-old bread
7 ounces flaked coconut
maple syrup
Directions:
1. In large bowl, beat eggs, then add milk, sugar and cinnamon.
2. Add bread, a few slices at a time, and let soak for 1 minute.
3. Remove bread, and coat both sides with coconut.
4. Place on parchment lined baking sheet and bake at 475 degrees for 5 minute on each side (10 minutes total).
5. Serve warm with maple syrup.
